Also known as, River Beluga Caviar Malossol, Fresh Royal Osetra Caviar is of the utmost quality. The word Malossol means low salt content in Russian, which is where this delicious caviar hails from. It is imperative that you do not freeze this caviar, but store it in the coldest part of your refrigerator. The dark and rich color is complimented by a subtly sweet incredible flavor, making Osetra Royal Black, the perfect caviar.
After harvesting sturgeon roe, or caviar, the size and color is graded, much like pearls. There are three species of sturgeon that caviar comes from. Beluga, being the largest of the species, Osetra, which is the second largest sturgeon, and Sevruga. All caviar comes from the Caspian Sea and surrounding areas.
When selecting caviar, it is important that you taste all three types in order to determine what you prefer. Beluga caviar has a large roe and is light or dark gray. Osetra has large eggs and is a dark or golden brown. Occasionally Osetra can be light gold. Sebruga roe is dark gray and small.
Caviar is graded according to its size and color. Some folks swear by larger eggs that are a lighter color, while others do not buy according to grading.
Avoid using silver or stainless steel spoons as they can give the roe a tinny flavor. Instead, use gold, bone, horn, or mother-of-pearl. If you ever order caviar in a restaurant, this is how it is served.
